Provide mechanical ventilation of sufficient capacity to keep rooms free of excessive heat, steam, condensation, vapors, smoke, and fumes./ The cooking equipment is positioned beneath the ventilation hood whereby half of the flat grill extends beyond the right-hand end of the canopy; heavy steam, vapors, and fumes are released throughout the room while cooking on the grill. Position the cooking equipment beneath the ventilation hood so that the canopy completely overhangs it for effective capture and exhaust of cooking effluent.

Keep the waste-grease receptacle closed (Wings Plus #3 uses the left-hand receptacle).
