3-501.17(A) Properly date mark all TCS food prepared in-house, when held for more than 24 hours, with the preparation date and date of discard—not to exceed 7 days following the date of preparation (Day 1) + 6 days = 7 days refrigerated storage limit./ Multiple packages of in-house prepared casseroles and deli salads, holding for sale in the retail display cooler and marked to exceed a 7-day limit, were relabeled during the inspection to expire on Day 7 as required.

Discard RTE/TCS foods that have exceeded 7 days or for which the date of preparation cannot be determined./ In-house prepared pimento cheese spreads, packaged and on retail sale in the dining room merchandising cooler, and marked with "Best by" dates beyond 7 days were voluntarily discarded during the inspection. Date mark in-house prepared foods that are packaged for retail sale with the EXPIRATION date (following the date of preparation [Day 1] + 6 days = 7 days refrigerated storage limit) of the batch from which the food being packaged originates.

3-201.11(C); 3-602.11(B)(5) Label packaged food as specified in law (21 CFR 101; 9 CFR 317; 9 CFR 381 Subpart N; 3-202.17, 3-202.18). Include: a list of ingredients in descending order of predominance; listing of sub-ingredients of ingredients which themselves are made from two or more ingredients; the name of the food source for each major food allergen contained in the food on the label for food packaged in a food establishment unless the food source is part of the common name of the ingredient; and a declaration of the net quantity of ingredients./ Variety in-house prepared casseroles on sale from the retail RI cooler and freezer are not labeled for ingredients, the name of common allergens, or a net declaration of contents.

(B) Loosely cover or uncover food until cooled./ Lids were lifted during the inspection on containers of chicken salad in the WI cooler (the salad had been mixed at room temperature) to allow the food to continue cooling under refrigeration.

5-501.13; 5-501.114 Ensure that outdoor storage receptacles used for refuse and for use with materials containing food residue, are durable, leak-proof, and pest-resistant with the drain plugs in place./ The dumpster is missing its drain plug and is rusted and broken-through along the lower seams on all sides.
