Use the commercial kitchen refrigeration equipment for cooling hot food (the soda cooler is not designed for it); and, leave the food uncovered or loosely covered to facilitate heat transfer out of the food.

(A)(2) Maintain TCS food at 41 F or below./ Air temperature of the refrigerated display case at the service counter reading 45F with a min-registering thermometer; portion containers of cut melon, cheesecake, rice pudding, cream and egg nog (both containing gelatin cubes) measuring 44F-48F were voluntarily discarded. Cease storing TCS food in this refrigerated case until holding food at proper temperature.

Clean the refuse storage area as often as necessary to maintain cleanliness./ Spilled trash, wastes, and debris on the ground in the refuse enclosure.

3-201.11(B) Cease the service, sale, or use of food prepared in a non-permitted facility (such as a private home)./ Cakes, that were prepared in a private home, and offered for sale from the dessert case at the service counter, were removed from sale during the inspection for removal from the facility.
