Cease cooling of TCS foods that have been heated without a valid permit issued by the Regulatory Authority to engage in that specific activity./ Hot dogs and hamburgers that had been heated, and chicken nuggets and chicken sandwiches from Chik-Fil-A left-over from last operation and found stored in the RI cooler (measuring >41F and up to 53F) were voluntarily discarded during the inspection. CEASE all carry-over of TCS foods that have been heated: immediately DISCARD when removing these foods from hot holding temperature control.

Post a sign at the handsinks in the restrooms that notifies employees to wash hands.

4-302.12(B); 4-302.13 (A) Provide a readily available temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin foods such as meat patties, hot dogs, and chicken filets and nuggets; and, for manual warewashing to measure washing and sanitizing temperatures./ The only probe thermometer available in the concession is a meat thermometer: provide at least one working probe thermometer (ex: digital-type) for these applications.
