Disassemble the machine to it fullest extent; using long-handled, narrow-headed brushes to access the niches, crevices, and hard-to-reach areas, provide manual cleaning effective to remove residues. Rinse; rewash any surface with detectable residue after rinsing and before sanitizing. Do not use the slicer again until properly cleaned and sanitized.
4-601.11(C) Keep nonfood contact surfaces of equipment free of an accumulation of dust, dirt, food residue, and other debris./ Food residues remaining on the exterior of the food slicer and the stand mixer housing following cleaning after last use.

The supply tubing on the sanitizer dispenser was reinserted in the bulk chemical during the inspection, and the solution was replaced with fresh that tested 100ppm.
