4-501.114, 4-703.11 Provide a chemical sanitizer used in mechanical ware washing equipment as specified by in 7-204.11./ The sanitization rinse of the low-temp dishmachine tested negative for chlorine: with bulk chemical supplied and tubing in place, repeated primings of the sanitizer dispenser disclosed that chemical was not dispensing into the rinse. Cease using the dishmachine for sanitizing until it is repaired to provide proper chlorine concentration for sanitization. Manual sanitization of washed wares in the sanitization compartment of the warewashing sink was implemented with this inspection finding.
