3-501.17(A) Properly date mark all TCS food prepared in-house, when held for more than 24 hours, with the preparation date and date of discard—not to exceed 7 days including the date of preparation. // Cooked rice, cooked chicken, and all other cooked TCS food items were date marked for 8 days. The rice and chicken were date marked 9-10-26 through 9-17-26 which exceeds the 7 days. The PIC was informed that day 1 starts the day the food is cooked and that day 2 will be the following day.
